There’s just something about summer which says cocktails, don’t you think? Sitting in the sunshine, hanging out with friends, and long lazy nights.
I love a classic jug of Pimm’s No 1 Fruit Cup to share with friends in the summer time. I’m also inordinately fond of tequila and lime. As a Kiwi, I just adore the refreshing taste of L&P, the lemony soft drink that is world famous in New Zealand.
Sonia from Sonia Styling asked me for a Pimm’s recipe, and I couldn’t resist throwing in my other favourite summer cocktail too. I’m sharing my Kimba L&P cocktails – the Kimba L&P Tequila Cocktail and the Kimba L&P Pimm’s Cup!
Kimba L&P Tequila Cocktail
I love fresh herbs, I love tequila and I love L&P. Combining all three in the Kimba L&P Tequila Cocktail makes me a very happy girl!
- Fresh limes
- Fresh herbs – I like mint and / or basil
- Ice cubes
- Cocktail muddler
- Cocktail glass
Use the cocktail muddler to get the pulp and juice out of the lime, straight into the cocktail glass. Give the lime a good bash to release the oils from the rind. Add tequila to taste. Crush fresh mint to release the aroma and flavour and add to the glass. Add ice cubes and top with L&P. Garnish with a sprig of fresh mint. Enjoy!
The classic Pimm’s recipe is made with one part Pimm’s to three parts of lemonade. I find it a little too sweet, so I like to use two parts of L&P which is a little more tart. It’s more like an old fashioned lemonade. I finish it with one part of soda water.

- Ice cubes
- Fresh herbs, veg and fruit
Firstly, chop up your selection of fruit, vegetables and herbs. The traditional recipe includes strawberries, cucumber, mint and orange. I like to use mint and / or basil, nectarines or tart peaches, celery, strawberries, lemons and limes, apples. Basically, you can chop up whatever you fancy if you think it will taste good!
Next, add one part of Pimm’s No 1 (a spirit based drink base you can buy in bottle shops) to a large jug. For a traditional Pimm’s, you’d add three parts of lemonade.
For the Kimba L&P Pimm’s Cup, add two parts of L&P and one part of soda water. If you have a sweeter tooth, go for three parts of L&P.
Add your chopped ingredients, and ice cubes. Give it a good stir, pour into serving glasses and enjoy!
